Dragon Fruit & Banana Bowl
Ingredients
3/4 cup frozen dragonfruit chunks
1 medium banana, chopped up (substitute: frozen banana chunks)
1/3 cup pineapple chunks
2 tbsp peanut butter
2 - 3 tbsp granola (make your own, or use store-bought)
1 tbsp desiccated coconut
Optional add-on: 2 1/2 tbsp of any citric flavoured whey protein powder (this recipe uses a blood orange one)
Method
Blend the dragon fruit, banana, pineapple, and protein powder together (optional: add a little milk if you want a thinner, more smoothie-like consistency). Pour into a medium bowl.
Warm the peanut butter in the microwave, and melt it till it’s flowy. Slice the remaining 1/4 of the banana. Toast the desiccated coconut till it’s light brown. Top off the bowl with the granola and banana slices. Drizzle with peanut butter and sprinkle with the coconut. Enjoy!
