Figgy Toast

Makes: 2 portions (1 serving size as shown)

Ingredients

  • 2 slices of bread of choice

  • Butter, to brush the bread with

  • 3 fresh figs

  • 2 tbsp goat cheese

  • 1/4 tsp ground black pepper

  • 1/4 tsp fresh thyme, finely minced

  • 1 tsp honey

Method

  • Preheat the oven to 350 F. Brush the bread slices with butter, and toast for 15 minutes. Flip over when done, and toast again for 5 minutes.

  • Spread the goat cheese on the toast and sprinkle the pepper over it. Slice the figs into thin sections and layer them over the cheese. Sprinkle thyme and drizzle with honey.
