GRILLED KIWI & SKYR ON TOAST

Ingredients

  • 1 whole kiwi, peeled

  • 1 thick slice of any country-style bread

  • 3/4 cup strawberry skyr

  • 1/4 tsp finely minced fresh ginger

  • 1/4 tsp ground ginger powder

  • 1/2 tsp vanilla extract

  • 3 - 4 tbsp granola (make your own, or use store bought)

  • Butter

  • Maple syrup/honey/agave nectar, for garnishing (optional)

Method

  • Preheat the oven to 350 F. Brush the bread with butter and toast it in the oven for 12 - 13 minutes. Whisk together the skyr, vanilla, and both forms of ginger; set aside.

  • Cut the kiwi into thick slices (about 1/2-inch). Brush the surface of a cast-iron skillet with ample amount of butter and heat it on medium. Brush both sides of the kiwi slices with butter and transfer to the skillet. Increase heat to medium-high and grill till the edges of the slices are slightly charred. Monitor the heat and grease so as to not let the kiwi stick to the skillet. Alternatively, use a BBQ grill if you have access to one.

  • Once the toast is ready, add dollops of the skyr over it, and top off with the grilled kiwi and granola. Enjoy warm!
