Honeydew Parfait
Ingredients
3/4 - 1 cup plain Greek yogurt
1/2 tbsp heavy cream
1/2 tsp vanilla extract
2 tsp powdered sugar
3 - 4 tbsp granola (make your own, or use store-bought)
3/4 cup honeydew melon chunks + a more for garnishing
7 medium strawberries
Method
Blend the honeydew melon chunks into a thick, uniform purée. In a medium bowl, whisk the yogurt, heavy cream, sugar, and vanilla till light and fluffy. Fold in the melon purée till fully incorporated, and refrigerate for 5 minutes. Blend the strawberries just enough to make a thick, chunky purée with some fruit bits in it.
Layer the yogurt, purée, melon chunks, and granola in any sequence of your choice. Enjoy in vertical scoops!
