Softbaked Peach & Oatmeal Bars

Ingredients

GROUP A: OATMEAL

  • 2 1/2 tbsp plain oats (any kind; this recipe uses the steel cut version)

  • 1/3 cup milk

  • 1/4 tsp vanilla extract

  • 2 tsp honey (substitute: maple syrup)

  • 1 peach, chopped in small bits

GROUP B: DRY INGREDIENTS

  • 1/4 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1/4 tsp salt

  • 3 tbsp AP flour

  • 1/4 tsp baking powder

Method

  • Preheat the oven to 350 F. Microwave the oats and milk together for 30 seconds. Add the remaining Group A ingredients to the oatmeal and mix well. Add Group B ingredients to the batter, and fold to incorporate fully.

  • Chill the mixture for 10 minutes. Pour into a cake pan or mold of choice and bake for 17 - 18 minutes initially; increment only if needed, till a skewer poked in comes out clean.
