Spicy Banana & Granola Jar

Ingredients

  • 1 large firm banana

  • 1/2 tsp ground harissa seasoning mix

  • 1/4 tsp ground nutmeg

  • 1/4 tsp granulated sugar

  • 1/2 tsp butter

  • 1/4 cup + 2 tbsp plain Greek yogurt, whipped smooth

  • 2 tbsp creamy peanut butter (substitute: any other nut butter of choice)

  • 4 - 5 tbsp granola (make your own, or use store bought)

  • 1 tbsp whole almonds (preferably roasted and salted)

Method

  • Slice the banana into 1/4-inch thick slices. Season with the harissa and nutmeg. Brush a skillet with butter and sprinkle the sugar evenly across the surface. Heat for 30 seconds on medium-high heat, then reduce to medium-low, and add the banana slices to the skillet. Cook for 1 minute, then flip and cook for 1 minute again. Both sides should be browned.

  • Layer the whipped yogurt, peanut butter, granola, and almonds in any sequence you like and top off with the spicy caramelized bananas.
