Walnut Scramble

Makes: 1 portion (serving size as shown)

INGREDIENTS

GROUP A: TOAST

  • Bread of choice, to toast

  • 1/4 tsp butter + more for brushing on bread

GROUP B: SCRAMBLE

  • 2 medium eggs

  • 1 1/2 tbsp milk

  • 1/4 tsp ground paprika (substitutes: chipotle seasoning or smoked paprika)

  • Salt & pepper, to taste

GROUP C: GARNISH

  • 1/4 tsp garlic, chopped

  • 1/2 tsp lime juice

  • 1/2 tsp parsley, finely minced

  • 1 tbsp walnuts, chopped & toasted

METHOD

  • Preheat oven to 350 F. Lightly brush the slice(s) of bread with butter, and toast for 10 min. Flip around, and toast for another 5 minutes, till lightly browned and crisp.

  • Heat butter in a skillet. Whisk together all Group B ingredients and cook eggs till scrambled.

  • Take eggs off heat and toss in all garnishing. Mix until fully incorporated. Pile scrambled eggs on toast. Top off with extra walnuts and parsley if desired.
