Malaysian Curry Spice

Makes: Approximately 1/4 cup of spice mix

No sugar, all spice = Everything nice.

Ingredients

GROUP A: GROUND SPICES

  • 1/2 tsp red chili powder

  • 1/2 tsp turmeric

GROUP B: WHOLE SPICES

  • 2 whole cloves

  • 1/4 inch cinnamon bark

  • 1/4 tsp black cardamom seeds

  • 1/4 tsp peppercorns

  • 2 tbsp coriander seeds

  • 1 tbsp cumin seeds

  • 3/4 tbsp fennel seeds

Method

  • Toast all the whole spices over medium heat for 30 - 40 seconds, then set aside to completely cool down. Toss the cooled whole spices into a food processor or grinder along with the ground spices, and blitz till the mixture is a fine powder.
