Poaching Syrup

Makes: Approximately 2 cups of poaching syrup

This syrup can be used to poach fruit in, sweeten a cup of tea, or as a yum addition à la fall/winter cocktails (did someone say Hot Toddy?) Feel free to add or substitute spices/herbs to your liking.

Ingredients

  • 2 1/2 cups water

  • 1/2 tsp lime juice

  • 2 orange slices, 1/4-inch thick

  • 1 ginger slice, 1/8-inch thick

  • 1/2 tsp ground cardamom

  • 2 whole cloves

  • 1 whole star anise

  • 1/2 tsp ground nutmeg

  • 1/2 tsp whole black peppercorns

  • 1 tsp vanilla extract

  • 1 1/2 tsp granulated sugar

  • 1/4 tsp salt

Method

  • Combine all the ingredients in a deep, medium-sized cook pot. Bring to a boil on medium-high heat, stirring to make sure all the sugar has dissolved. Reduce heat and simmer for 17 - 20 minutes.

  • Do not discard the fruit, spices, or herbs. Store the syrup in an air-tight jar and refrigerate for up to 2 weeks.
