Poaching Syrup
This syrup can be used to poach fruit in, sweeten a cup of tea, or as a yum addition à la fall/winter cocktails (did someone say Hot Toddy?) Feel free to add or substitute spices/herbs to your liking.
Ingredients
2 1/2 cups water
1/2 tsp lime juice
2 orange slices, 1/4-inch thick
1 ginger slice, 1/8-inch thick
1/2 tsp ground cardamom
2 whole cloves
1 whole star anise
1/2 tsp ground nutmeg
1/2 tsp whole black peppercorns
1 tsp vanilla extract
1 1/2 tsp granulated sugar
1/4 tsp salt
Method
Combine all the ingredients in a deep, medium-sized cook pot. Bring to a boil on medium-high heat, stirring to make sure all the sugar has dissolved. Reduce heat and simmer for 17 - 20 minutes.
Do not discard the fruit, spices, or herbs. Store the syrup in an air-tight jar and refrigerate for up to 2 weeks.
