Sweet & Spicy Chili Sauce

Makes: Approximately 1 cup of sauce

Ingredients

  • 1/2 tsp finely minced garlic

  • 1 tsp tapioca starch (substitute: corn starch)

  • 1 tsp minced chipotle peppers (this recipe uses chipotle peppers pre-soaked in adobo sauce)

  • 1/3 cup water

  • 3 tbsp finely minced tomato

  • 1/3 cup rice vinegar

  • 1 tsp finely minced ginger

  • 1 1/2 tbsp granulated sugar

Method

  • In a medium saucepan, bring the vinegar and water to a boil over high heat. Stir in the sugar, ginger, garlic, chipotle peppers, and minced tomato; simmer the mixture for 5 minutes. Stir in the tapioca starch. Remove the saucepan from stove to cool. Then transfer to a bowl, cover, and refrigerate until needed.
