Sweet & Spicy Chili Sauce
Ingredients
1/2 tsp finely minced garlic
1 tsp tapioca starch (substitute: corn starch)
1 tsp minced chipotle peppers (this recipe uses chipotle peppers pre-soaked in adobo sauce)
1/3 cup water
3 tbsp finely minced tomato
1/3 cup rice vinegar
1 tsp finely minced ginger
1 1/2 tbsp granulated sugar
Method
In a medium saucepan, bring the vinegar and water to a boil over high heat. Stir in the sugar, ginger, garlic, chipotle peppers, and minced tomato; simmer the mixture for 5 minutes. Stir in the tapioca starch. Remove the saucepan from stove to cool. Then transfer to a bowl, cover, and refrigerate until needed.
