Ghee Roasted Fennel Shrimp

Ingredients

  • 1/3 cup uncooked rice

  • 1 1/2 cup water

  • 8 - 10 large shrimp, peeled and deveined

  • 1/4 cup finely chopped red onion

  • 1/2 tsp ghee

  • 1/2 red chili flakes

  • 1/4 tsp fennel seeds

  • 1/4 tsp cumin seeds

  • 1 tsp finely chopped garlic

  • 1/2 tsp sesame seeds

  • Salt & pepper, to taste

  • Coriander, to garnish

  • Lime juice, to garnish

Method

  • Pat the shrimp dry and season with salt and pepper. Crush the chili flakes, fennel seeds, and cumin seeds to a coarse powdery consistency using a pestle & mortar, or a coffee grinder.

  • In a medium saucepan, bring the water to a rolling boil, then add the rice and some salt to taste. Cook until the rice is fluffy, then drain the water, and transfer the rice to a plate. Squeeze lime juice over it.

  • Wipe down the saucepan and heat the ghee on medium-high heat. Add the onions and sauté till lightly browned. Add the shrimp and the spice mix and stir well to ensure that the shrimp is well coated with the spices. Cook until the shrimp is lightly browned on both sides, and plate it over the rice. Do not turn off the heat.

  • Add the finely chopped garlic bits to the skillet, and sauté till they are browned and crisp. Add the sesame seeds to the skillet and toast till slightly brown. Remove from the stove and sprinkle over the shrimp. Garnish with chopped cilantro and enjoy immediately, while the garlic is crispy.
