Spicy, Sticky Pineapple Chicken

This cast-iron braise is not only great by itself, but also makes for a stellar taco Tuesday special!

Ingredients

  • 4 oz boneless chicken

  • 1/4 tsp ground paprika

  • 1/2 tsp olive oil

  • 1/3 cup diced pineapple

  • 1/3 cup slivered red onion

  • 1 cup sweet and spicy chili sauce

  • 1 whole scallion shoot, thinly sliced

  • 1/4 tsp sesame seeds

  • Salt & pepper, to taste

Method

  • Preheat the oven to 420 F. Dice the chicken roughly into 1-inch chunks and season with paprika, salt and pepper. Toss the chicken, pineapple, and red onion into the skillet. Pour in the olive oil and chili sauce and ensure that everything is well coated prior to cooking. Cook for 22 minutes, stirring to mix everything again at the halfway mark.

  • Remove from the oven and let the contents of the skillet cool down for a couple of minutes. Garnish with the sliced scallion and sesame seeds. Enjoy by itself, over rice, or make tacos.

Please the seul: To make taco filling, shred the chicken by hand once it has cooled for a few minutes.
