FigBerry Tart

Makes: 1 tart (serving size as shown)

Ingredients

Group A: Citrus whipped cream

  • 1/4 cup heavy cream

  • 1 tsp dried or fresh citrus zest (use either orange, lime, or lemon, or all three)

  • 1 tsp powdered sugar

Group B: Everything else

  • 1 oat flour tart shell (recipe here, or use regular store-bought tart shells)

  • 2 large strawberries (use more if wanted)

  • 1 fresh fig (use more if wanted)

  • 2 - 3 mint leaves, finely minced

Method

  • Make the whipped cream: Whip heavy cream to stiff peaks and fold in the sugar and citric zest.

  • Fill the tart shell with the citrus whipped cream. Slice the strawberries and fig into thin sections and lay over the cream. Top off with the finely minced mint leaves.
