FigBerry Tart
Ingredients
Group A: Citrus whipped cream
1/4 cup heavy cream
1 tsp dried or fresh citrus zest (use either orange, lime, or lemon, or all three)
1 tsp powdered sugar
Group B: Everything else
1 oat flour tart shell (recipe here, or use regular store-bought tart shells)
2 large strawberries (use more if wanted)
1 fresh fig (use more if wanted)
2 - 3 mint leaves, finely minced
Method
Make the whipped cream: Whip heavy cream to stiff peaks and fold in the sugar and citric zest.
Fill the tart shell with the citrus whipped cream. Slice the strawberries and fig into thin sections and lay over the cream. Top off with the finely minced mint leaves.
