Tri-Colour Sugar Cookie Stars

Tri-Colour Sugar Cookie Stars With Lime and Pistachio

Makes: Approximately 20 small stars. Size as seen above.

ingredients

  • 1/4 cup unsalted butter

  • 1/2 cup white granulated sugar

  • 1/2 tsp bourbon vanilla paste

  • 1 small egg

  • 1 cup AP flour

  • 1/4 tsp baking powder

  • Pinch of sea salt

  • 1 sachet of Crystal Light lime flavour

  • 4 tsp ground pistachio powder

  • Purple, green, and blue food colouring (optional)

method

  • Beat the butter and sugar in a medium bowl till the mixture is fluffy, pale, and creamy.

  • Add in the vanilla and egg. Beat again to form a cohesive mixture.

  • Mix all the dry ingredients together in a separate bowl. Sift this mixture into the wet mixture in parts, and fold with a spatula till it forms a thick dough.

  • Divide this dough into 3 parts and add food colouring drops of your choice to each third. Preheat the oven to 325 F.

  • Roll each piece of dough and flatten to a disk. Cover with plastic wrap and chill in the fridge for 10-15 minutes.

  • Take out the dough, roll out each disk to about 1/6-inch thickness and cut shapes of your choice with a cookie cutter. Layer the shapes over each other to make a cookie shape of your choice. Chill these cut out cookies again for 10 minutes.

  • Bake for 8-10 minutes, until the edges of the cookies slightly brown. Take out the tray and leave the cookies on it for 5 minutes before transferring to a cooling rack. Cool completely at room temperature before eating or decorating further!
