Everysunday Bagel Sandwich

Makes: 1 chubby, delicious breakfast sandwich

It’s an everything bagel stuffed with all the goodies associated with a classic weekend mid-day meal. Don’t think, just make.

ingredients

  • 1 everything bagel

  • 2 eggs

  • 2 - 3 tbsp hummus (I used a home-made roasted carrot version; you can use any kind you like)

  • Pea shoots

  • 1 tsp chili crisp or chili oil

  • Sliced cheese (optional, any kind you like!)

  • Pickled onions

  • Butter, for the eggs

  • Salt & pepper, to taste

METHOD

  • Heat a knob of butter in a small skillet and fry the eggs on medium heat till the edges are crispy and the yoks are set to your liking. Toast the bagel halves either in the oven or on a grill pan.

  • Assemble: Smear the bottom half of the bagel with the hummus and sprinkle a handful of pea shoots over it. Layer with one fried egg and add chili crisp over it. Layer with the second egg, cheese slice, and finally the pickled onions. Close off with the second bagel half and dig in ASAP.
