Orange & Spice Waffles

Makes: 1 portion of 3 medium, square-shaped waffles (this will depend on your waffle maker)

INGREDIENTS

GROUP A: WAFFLES

  • 1/3 cup AP flour

  • 1/4 tsp baking powder

  • 1/4 tsp ground cardamom

  • 1 whole clove, ground into a powder

  • 1/4 tsp salt

  • 2 tsp granulated sugar

  • 1/4 tsp poppy seeds

  • 1 medium egg

  • 1/2 tsp vanilla extract

  • 1 tsp freshly grated orange zest

  • 1/4 cup milk

  • 1 tbsp water

  • 1 tsp butter + more for brushing on the waffle iron

GROUP B: ORANGE SYRUP

  • 1 tsp butter

  • 1/4 cup freshly squeezed orange juice

  • 2 tbsp fresh lemon juice

  • 1/2 tbsp maple syrup

METHOD

  • Orange syrup: Heat all Group B ingredients in a saucepan over medium heat. Stir well and keep warm on low heat till the waffles are ready to serve.

  • Preheat the oven to 350 F. Simultaneously, brush the waffle iron with butter and heat it to desired setting.

  • Whisk together all Group A ingredients into a smooth, lump-less batter. Pour it onto the waffle iron and cook till the waffles are slightly golden- brown. Depending on the size and shape of your waffle iron, you may or may not need to repeat this till all the batter is consumed. Lightly brush the cooked waffles with butter, pop them in the oven, and toast for 12 minutes, till they are crisp and a light brown tone all over.

  • Plate the waffles, garnish with some fresh orange slices, and drizzle the orange syrup all over. Eat while warm.
