Makes: 1 refreshing twist on a Tom Collins

What do you call a Tom Collins that's ambitiously made with aquavit instead of gin and uses 5 different fresh herbs/add-ins? An Herbacious Collins.

ingredients

  • 3 - 4 mint leaves

  • 2 basil leaves

  • 1/8” knob of jalapeno

  • 2 - 3 thick slices of cucumber

  • 5 - 6 whole black peppercorns

  • 2 oz aquavit (substitute: any botanical gin)

  • 1 oz simple syrup

  • 1 oz fresh lemon juice

  • Ice

  • Cucumber ribbons, to garnish

  • Mint leaves, to garnish

  • Lemon rind, to garnish

method

  • Line the inner walls of a highball glass with cucumber ribbons and chill the glass for 5 minutes.

  • Add the mint, basil, jalapeno, cucumber slices, and peppercorns to a cocktail shaker and muddle. Pour in the aquavit, simple syrup, and lemon juice. Add 1 cup of cubed ice and shake well.

  • Fill the chilled highball glass with crushed ice. Strain the contents of the shaker into this glass using a fine mesh sieve. Garnish with a mint frond and/or lemon peel.
